Vegan Mushroom Tagine

Ingredients

1 red onion - sliced


1 tsp olive oil


1 can chickpeas - rinsed and drained


1 can chopped tomatoes


1 pack of Irish Chestnut mushrooms


1 tsp of ground cumin


0.5 tsp of cinnamon


1 tsp of honey


200g Cous-Cous


40g dried apricots - chopped


Fresh flat parsley - chopped


Method

    Heat your oil in a pan and add mushrooms leave to simmer

    Add cumin and cinnamon stir

  • 3

    Add mushrooms - fry these off a little

  • 4

    Add chopped tomatoes, chickpeas and honey.

    Leave to simmer for 8-10 mins

  • 6

    Prep your cous-cous (follow the packet) and your apricots and parsley

  • 7

    Serve your cous-cous with the mushroom and chickpea Tagine on top
