Ingredients

  • 1 red onion - sliced
  • 1 tsp olive oil
  • 1 can chickpeas - rinsed and drained
  • 1 can chopped tomatoes
  • 1 pack of Irish Chestnut mushrooms
  • 1 tsp of ground cumin
  • 0.5 tsp of cinnamon
  • 1 tsp of honey
  • 200g Cous-Cous
  • 40g dried apricots - chopped
  • Fresh flat parsley - chopped

Method

1 Heat your oil in a pan and add mushrooms leave to simmer

2 Add cumin and cinnamon stir

3 Add mushrooms - fry these off a little

4 Add chopped tomatoes, chickpeas and honey.

5 Leave to simmer for 8-10 mins

6 Prep your cous-cous (follow the packet) and your apricots and parsley

7 Serve your cous-cous with the mushroom and chickpea Tagine on top
