1 Heat your oil in a pan and add mushrooms leave to simmer
2 Add cumin and cinnamon stir
3 Add mushrooms - fry these off a little
4 Add chopped tomatoes, chickpeas and honey.
5 Leave to simmer for 8-10 mins
6 Prep your cous-cous (follow the packet) and your apricots and parsley
7 Serve your cous-cous with the mushroom and chickpea Tagine on top
