• 1 tsp olive oil
  • 400g button mushrooms, thickly sliced
  • 1 tsp sweet paprika
  • 125g cherry tomatoes, halved
  • 10g fl at leaf parsley, roughly chopped
  • 4 thick slices whole grain bread, toasted
  • 200ml cottage cheese


1 Heat oil in a frying pan. Add the mushrooms and paprika to the pan and cook, tossing for 6-8 mins until light golden.

2 Add the tomatoes and cook for 3-4 mins until warmed through. Sprinkle over the parsley, season with salt and pepper.

3 Top the toast with cottage cheese. Spoon over the mushroom mixture. Serve.
