Sautéed Mushrooms on Toast

Ingredients

1 tsp olive oil


400g button mushrooms, thickly sliced


1 tsp sweet paprika


125g cherry tomatoes, halved


10g fl at leaf parsley, roughly chopped


4 thick slices whole grain bread, toasted


200ml cottage cheese


Method

    Heat oil in a frying pan. Add the mushrooms and paprika to the pan and cook, tossing for 6-8 mins until light golden.

    Add the tomatoes and cook for 3-4 mins until warmed through. Sprinkle over the parsley, season with salt and pepper.

    Top the toast with cottage cheese. Spoon over the mushroom mixture. Serve.
