Mushroom Egg Muffins

Ingredients

12 eggs (dilute with milk like I did if you don’t have enough eggs)


UK mushrooms


Any toppings you like (I used feta cheese, peppers, tomatoes, and some parsley)


Method

    Bake for 20-25 mins at 180 degrees (you can make a batch and keep it in the fridge for up to 5 days - just pop it in the microwave and reheat for 20 - 25 seconds.
