Mushroom Curry

Ingredients

Dry spice mix (1tsp of coriander powder, chilli powder, cumin powder, 2.5 tsp of curry powder, 0.5 tsp of turmeric powder)


British Baby button mushrooms


Coriander (for the curry and garnish)


1 white onion (chopped)


3 cloves of garlic (chopped)


1 small cinnamon stick


1 tbsp of Greek yoghurt


1 tbsp of salted butter


Lemon wedge


Method

    Sweat the onions and garlic into a pot of hot oil

  • 2

    Add the spice mix and fry off the mix and pour some hot water to form a paste

  • 3

    Add the mushrooms, salted butter and cinnamon stick into the pot and mix it with the spice mix and close the lid to cook for a few minutes

  • 4

    Add more hot water and allow to simmer. Once thickened, add the Greek yoghurt, coriander and a squeeze of lemon
