Ingredients

  • Dry spice mix (1tsp of coriander powder, chilli powder, cumin powder, 2.5 tsp of curry powder, 0.5 tsp of turmeric powder)
  • British Baby button mushrooms
  • Coriander (for the curry and garnish)
  • 1 white onion (chopped)
  • 3 cloves of garlic (chopped)
  • 1 small cinnamon stick
  • 1 tbsp of Greek yoghurt
  • 1 tbsp of salted butter
  • Lemon wedge

Method

1 Sweat the onions and garlic into a pot of hot oil

2 Add the spice mix and fry off the mix and pour some hot water to form a paste

3 Add the mushrooms, salted butter and cinnamon stick into the pot and mix it with the spice mix and close the lid to cook for a few minutes

4 Add more hot water and allow to simmer. Once thickened, add the Greek yoghurt, coriander and a squeeze of lemon
