Ingredients

  • Firm tofu, cubed- use as much as you please!
  • 1 to 2 cloves of garlic
  • 1/2 onion, finely chopped
  • 1 tsp of garam masala
  • 100g mushrooms (I used British chestnut mushrooms & Irish white mushrooms again ???? I chopped the chestnut mushrooms & sliced the white ones for different textures)
  • 1 tbsp of Greek yoghurt
  • 200g tin chopped tomatoes
  • Squeeze of lemon juice
  • Mirin - use however much you want, I used this to balance out the acidity from the tomatoes
  • Pinch of chilli flakes - I didn’t have any so I used around 1/2 a tsp of chilli powder ???? you could also add in some sliced red chillies, I used some to garnish ????

Method

1 Sauté the onions until slightly brown before adding in garlic, mushroom, garam masala, chilli powder and lemon juice. Fry for 2mins.

2 Add the tomatoes and turn up the heat so that everything starts to bubble! Cook for 10 mins until the sauce thickens. Make sure to stir occasionally so that it doesn’t stick (add a splash of water to loosen if necessary. This is also when I added in the mirin to taste)

3 Coat your cubed tofu in olive oil and seasoning (I used chilli powder, mixed herbs and some mirin) and then fry well! Make sure it’s super crispy ???? Salt and pepper to taste ❣️

4 Serve with greek yoghurt!
